Ingredients:
350g flour (+ 10-20g for dusting)
1 teaspoon salt
2 tablespoons vegetable oil
200ml hot water (not boiling, about 50-60°C/120-140°F)
Instructions:
Prepare the Dough:
In a large mixing bowl, combine the flour and salt.
Add the vegetable oil and gradually pour in the hot water while mixing with a spoon or spatula until a rough dough forms.
Knead the Dough:
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.
Cover the dough with a clean kitchen towel and let it rest for 15-20 minutes. This helps the gluten relax and makes rolling easier.
Divide and Roll:
Divide the dough into 6-8 equal portions (depending on how big you want your pitas).
Roll each portion into a ball, then flatten and roll out into circles about 5-6 inches (12-15 cm) in diameter and about 1/8 inch (3-4 mm) thick.
