Blackberry Cobbler


In place of the more conventional biscuit topping, this blackberry cobbler has a light and airy cake-like layer. This blackberry cobbler, according to my fiancé, is the greatest she's ever tasted. Top with heavy or whipped cream and serve warm.

Berries Requirements:

½ cup of pure sugar
1/3 cup of cornstarch
Fresh blackberries, 6 cups
For the batter, heat 1/4 cup of unsalted butter.

2 and a half cups unbleached flour
half a cup of powdered sugar
a spoonful of baking soda
one teaspoon of salt
2/3 cup of milk
melted 1/4 cup unsalted butter
1 teaspoon of vanilla flavoring
